Did quite a bit of sciencing on a few of the top wolves..
Snow Wolf: 14 Wis to tame, ~235 HP, damage range 1-18, found in tundra
Winter Wolf: 14 wis to tame, ~235 HP, damage range 1-18, found in Ebonbane manor
Sylvanthic Wolf(male): 15 wis to tame, ~260 HP, damage range 1-20. found in syvanthic wolves.
Huge Rock Wolf: 17 wis to tame, ~315 HP, damage range 2-23, found in Dymwood dell on infidian.
Red Wolf: 17 wis to tame, ~315 HP, damage range 1-22, Star caverns
My thoughts: Don't use winter wolf, didn't seem to be much better than snow wolf.. sylvanthic wolf is usually what I use until I can get red/dread or huge rock wolf. The huge rock wolf is pretty nice, haven't tested red/dread to see a good comparison yet but considering the fact that you don't have to kill anything to find this guy I think he is worth it... only problem is he seems to be a pain to track, I have yet to find him via tracking. Red wolf seemed about the same as huge rock wolf, a lil bit less damage in the long run but equal health.
Oh, this testing isn't gonna be exact or anything, just recorded roughly 200 hits per wolf(at me w/o armour) and thats what I got. Figured HP by killing wolf and seeing how much xp I gained from hits, then divided by two. (xp from melee hits= 2xp/1dmg)
On a random note, you get roughly 1.5 xp for every 1 damage that your wolfy does... not sure if its same with bonded wolves though.

Interesting. If you do end up doing some research on Huge Rock compared to Red and Dread then I'd be very interested to see the results.
I've never used the Huge Rock Wolf.

So in Luthien's brandy-new area in Dymwood Dell, there's "an enormous rock wolf"(not to be confused with "a huge roc wolf" that randomly wanders Dymwood, and also has same stats as red/dread, just doesn't require killing anything first) that also requires 17 wisdom to tame, BUT, has +1 strength/+1 dex, which is better than any of the other 3 top ones(aka "well-toned" and "moves with practiced ease" as opposed to "average strength" and "moves with confidence"). All appear to be "sturdy", but little bit of extra damage from the newist. Kind of hidden too, at the bottom of a pit...and don't be too weighted down or you won't be able to access said pit.
