Just curious what the consensus between harm and smite on undeads. Both seem to work pretty well, but I'm wondering if anyone has noticed a difference over the long run with regards to damage done vs. sps cost. I'm a relatively new pally, so haven't done serious testing with it yet.

The deal with smite vs harm is entirely dependant on alignment, mainly the NPCs.
You will get better bang (dmg) for you SP if you use smite against demonic creatures, regardless if that demonic is undead or not.
Evils and nastys are a different story, smite still does more dmg, but the dmg/sp ratio is better for harm.
The numbers of smites per kill vs harms per kill is not something I've ever memorised, purely because the numbers will constantly change as you level up your paladin and your harm/smite becomes more kickass. I can only think of about 4 undeads I ever smite, they are: Evil overlord Evil wizard Lich of merrick Aurgelmere
One thing to remember too is that if your going to be smiting demonics undeads, in most instances that harm, or your weapon will likely be sufficient for the killing blow, why waste 1/3rd of your sp to inflict the last 10 - 40 hp?
